How we grow it

We are an independent coffee brand. Everything we ship is from our own production, from planting to the bag.

The region

Finca San José sits between Páramo and El Socorro, Santander, at 1,600–1,800 meters, in the mountains.

Shade from guamo and plantain, birds in the groves. The cherries ripen slowly, and that shows in the cup.

From seed to tree

Seeds come from young lots with the best harvests. They germinate as “chapolas” for about 90 days, then nursery bags for 4–5 months, then the field with organic matter and shade trees between the rows.

After planting the tree flowers around 18 months and harvests around 26. We fertilize two or three times a year and clear weeds every 2–3 months.

Harvest, wash, dry

Pickers take only ripe cherries, three or four passes over two to three months. Daily cherry is pulped, washed, and floaters (defects) are removed. Drying is on a patio in the sun for 3–4 days. Bags of 40.6 kg go to roast, grind and pack.

Roast curves with TRITOCAFÉ. Packing in ECOBAG (75% compostable) from PACKVISION, with a degassing valve.
